GuardianWitness - Mark from Hanoi Street Food Tours explains a tasty dish

GuardianWitness

On a recent trip to Hanoi I did a street food tour with Mark from Hanoi Street Food Tours. I highly recommend doing a street food tour as soon as you arrive. It saves you the agony of staring at all the amazing food, but with the nagging fear of whether it’s safe to eat it, or what actually it is that’s being eaten! I admit to rather smugly watching other tourists peer into the street restaurants, look longingly, have a quick conference with their mate and then move on. If only you knew, I thought, as I tucked into my dish of wood-ear mushrooms and pork stuffed spring rolls, safe in the knowledge that Mark’s 10 years in Hanoi were my very reasonably-priced ticket to street food heaven (and bowel safety!). You also get to visit a local food market, an unforgettable experience in itself.
